Mustard Shrimp – On Popular Demand

Ingredients

  • 1/4 cup finely chopped onion
  • 4 garlic cloves, minced
  • 2 teaspoons olive oil
  • 1/4 cup white wine, apple juice or water
  • 3 tablespoons English Mustard Sauce
  • 1/8 teaspoon pepper
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 1 small tomato, seeded and diced
Directions
  • Saute onion and garlic in oil until tender
  • Stir in the wine or apple juice, mustard sauce and pepper
  • Reduce heat to medium-low and bring to boil
  • Add shrimp; cook and stir until shrimp turn pink
  • Stir in tomato and boil for 2 – 3 minutes on medium-low
  • Serve with finely chopped coriander garnish alongside steamed Basmati Rice
